Is there a way to, rather than default to one store as the pick up location, indicate that there are options. So, something like "Select Location" instead of the default PU location, and then they might understand that the"edit" button will bring them to their choices?

It works very similar to this in Checkout.
When you enter multiple locations in Store Manager and specify those stores as In-Store Pickup, those store addresses will show up in Checkout as options.
Going to Website > Store Locations allows you to enter multiple locations for your business. For each store you have the option to specify In-Store Pickup.
Those addresses marked as In-Store Pickup will automatically show up in Checkout, allowing the consumer to choose which store they would like for in-store pickup.
